For the best experience, enjoy it cold. To always have it ready to taste, cut it into small cubes and store them in a suitable container in the freezer. Served chilled, the nougat enhances its aromas and delivers a refined, long-lasting flavor.

History

In the heart of Tonara, in the historic region of Barbagia, 1,000 meters above sea level, surrounded by forests, pure springs, and fresh mountain air, the tradition of Sardinian nougat was born and continues to thrive today.

Until the 1960s, local artisans known as turronargios handcrafted small batches of nougat at home using ancient techniques, selling their creations at fairs across the island. In 1963, Salvatore Pruneddu founded the first mechanized Sardinian nougat factory, introducing electric machinery while preserving traditional craftsmanship. By combining heritage methods with modern production, he laid the foundation for what is now one of the most important companies in the Sardinian food sector.

More than fifty years later, the Pruneddu Nougat Factory still produces nougat daily according to the ancient recipe, in its modern facility located in Tonara, in the area known as “Su Pranu,” where every bar is born.


Philosophy

Quality

Real ingredients, old family recipes, and authentic artisanal techniques define our concept of quality. Our classic nougat, sold under the brands Pruneddu, Barbagia, and Arasulè, is made exclusively with:

  • The finest natural Sardinian honey

  • Superior-quality almonds, hazelnuts, and walnuts

  • Fresh egg white

We do not use sugar, corn syrup, preservatives, or artificial sweeteners.

Each dried fruit is carefully hand-selected, and even the slightest imperfection leads to rejection. Production batches are limited to a maximum of 60 kg to ensure constant quality control. For us, quality is not just a word it is a daily commitment and a philosophy rooted in respect for authentic taste.

Clarity and Transparency

Since the beginning, we have clearly indicated on every package the exact percentage of dried fruit contained in our nougat even before it was legally required. We specify the minimum percentages of almonds, hazelnuts, and walnuts so you always know what you are buying: not a block of sugar with a few nuts, but a genuine, premium Sardinian product.


Mission Statement

Our nougat is made with only three natural ingredients:

  • High-quality dried fruits

  • Natural Sardinian honey

  • 1% egg white

Some varieties are covered externally with wafer (l’ostia), which is never used as an ingredient in the mixture.

We use no preservatives, no sugar, no corn syrup, and no artificial sweeteners, only the natural sugars found in premium honey. Our expiration dates are intentionally shorter than many competitors’ because we prioritize freshness and authenticity over artificial shelf life.

This is our promise: true Sardinian nougat, made honestly and naturally.


Unique Nougat of Superior Quality

For decades we have produced authentic Torrone Sardo not just any nougat, but the real Sardinian one.

A true Sardinian nougat must:

  • Be made with premium Sardinian honey, top-quality dried fruits, and 1% egg white

  • Contain at least 50% dried fruit by weight

  • Contain no added sugars, corn syrup, or artificial sweeteners

Honey already contains natural sugars, nothing else is needed. Our secret lies in preserving traditional methods while selecting only the very best ingredients.

Enjoy It Cold

Our nougat can be stored in the freezer and it is even more delicious when served cold. The low temperature enhances the honey’s aroma and intensifies the flavors of the dried fruits. Once in your mouth, the aromas fully release in a true eruption of taste.

Only nougat made exclusively with natural honey can offer this unique experience.


Storage and Conservation

Store the nougat in a cool, dry place below 20°C. For optimal preservation:

  • Keep it sealed in the refrigerator, or

  • Store it in the freezer (recommended).

Before freezing, cut the nougat into small pieces and place them in an airtight container suitable for freezing. Properly stored, it can last for several months without absorbing moisture or altering its texture.

For easier cutting, gently warm the nougat for about 10 seconds in the microwave or near a heat source it will soften slightly and become easier to slice.


Expiration Dates

There is no legal maximum expiration date for nougat, so many producers extend shelf life at their discretion. We choose a different path.

Because we use only fresh, natural ingredients and no preservatives, we apply the following maximum shelf lives:

  • Walnut nougat: 10 months

  • Hazelnut nougat: 14 months

  • Almond nougat: 18 months

Walnut nougat is the most delicate and therefore has the shortest shelf life. Almond nougat lasts the longest, though we recommend enjoying all varieties well within two years for the best quality.
